Allow the user to configure them, if you can't find one in the config, or
proxy.<user's host> then give up.  Either that or use
proxy.telepathy.freedesktop.org :-P

You should implement jingle too.  The problem then becomes where to find a
STUN proxy, but those need less bandwidth so they're easier to host.
