Asking about the best performing server is a question that needs more detail
before it can be answered.
Are you planning on running on a single machine? A single processor? A farm
of machines? A single dual (or 4x, 8x, 16x) machine? Do you need the server
to be Windows, Solaris, Linux, Irix, or something else entirly?
Which is more important to you, a high simultaneous user count, or
user-to-user message latency?
What scale of simultaneous users are you talking about? 10? 1000?
100000? 10000000? 6.02E23?
Do you need logging and auditing features? Do you need an LDAP / AD server
to perform authentication? Can it keep up with the demand you're looking
for?
What database do you need? For a large installation (as the commercial guys
would define it) you're going to need a commercial database (Oracle, SQL
Server, etc). What kind of hardware is it going to run on?
The answer to all the above questions factor into the answer for "What is
the best performing server".
This doesn't even touch on feature set. Do you need Single-Sign on?
Active Directory or LDAP integration? Managed Roster Groups?
Conferencing? Regulatory Compliance? PubSub? Remote Management? Chinese
Walls? Various combinations of these features are supported by different
servers.
