Most jabber clients (such as Jabber Instant Messengeror WinJab) that are 
compiled to support SSL will have a setting like a check box  in the 
preferences. In some other clients, you won't see the option unless you 
have the SSL dll files (at least in Windows). You can grab the dll files 
from http://download.sourceforge.net/jabbercom/jabbercom_openssl096.zip 
and unzip them in the same folder as your client. That should do it.
