That server directory hierarchy looks like the better way to handle it.
Here's the way I would do it:

\ jabberfs
     \ groups
         \ Friends
             \ Robert [ Symlink to /jabberfs/deepdarc.com/darco ]
             \ Maria [ Symlink to /jabberfs/deepdarc.com/maria ]
         \ Elite
             \ St. Peter [ Symlink to /jabberfs/jabber.org/stpeter ]
     \ deepdarc.com
         \ .disco
             \ msn.deepdarc.com
                 \ stats
                 \ ...
             \ aim.deepdarc.com
                 \ stats
                 \ ...
         \ darco
             \ messages
             \ files
             \ profile
         \ maria
             \ messages
             \ files
             \ profile
     \ jabber.org
         \ .disco
             \ proxy.jabber.org
                 \ ...
         \ stpeter
             \ messages
             \ files
             \ profile

Something like that.
