You can read the RFCs on jabber.org for this.

Whatever the best way to find out how it works is to start a jabber 
client (for example PSI or Exodus) with the XML Debug Dialog enabled.

Then connect to a jabber server with gateways (for example 
amessage.info) and register to an aim/icq gateway...

and so on...
