You forgot to specify the preferred language. There are many libraryes for 
almost every programming language that one can choose.

do not know. Probably - you can try ejabberd. It is both have been tryed under 
a heavy load (as jabber.ru) and writed to be XMPP compliant.
Have not tried jabberd2 in production. May be it is good choice too.

The remote gateways in most cases are for little or moderate load AFAIK. If 
you want to use gateway in production use you will probably need to set up 
your own.
