Emulating Bandersnatch is easy.  For jabberd 2.0 you create a component which 
connects and binds itself as a message log, and for jabberd 1.4 you simply 
configure jabber.xml to forward a copy of all packets to your component, just 
the same as Bandersnatch.

As far as choice of language, I always choose Java but it isn't for everyone.  
There are decent component libraries in Java and Perl, and probably a few 
other languages.

P.S. is there a FAQ for this list?  This is the second time the exact same 
question has been asked in the past week, and it's been answered at least
