For me [1] was very helpfull for setting up an jabberserver. Thanks to 
the folks behind it ;-).
They provide step by step instructions on howto set things up.
Clients can be found on [2] for nearly every OS and taste.
LLuna2 [3] is a webenabled groupchat, which allows poeple to chat using 
browsers.
I think there are other similar projekts available, but I have not 
tested any of it.
