Have a look at JEP-0045 (Multi-User Chat), here:

It is intended to replace GroupChat and does (or could) support most of
what you need. It is still a draft proposal, however.

There's the mu-conference project on jabberstudio.org. It's an
implementation of the current MUC draft for jabberd.
