The only thing you can use XMPP for in this case is call setup/session
negotiation.
There is no way that the incured overhead of encapsulating voice into XMPP
will lead to a workable solution. The actual voice traffic will take place
out of band.
The negotiation itself can either be created anew or just encapsulate
existing protocols like SDP.

There is not major issue just replacing SIP by XMPP to carry the equivalent
SIP payload, and the result will certgainly be less verbose.
