Psi (http://psi.affinix.com/) is good, but not as feature rich as JIM.
No invisibility or Groupchat. It's also crossplatform (linux, windows,
MacOS X(!)) and opensource. Just Another Jabber Client (or JAJC,
http://www.jabber.ru/projects/jajc/) is also good, and is *very*
feature rich. Yabber (yabber.org) is something to keep an eye on as it
develops further.. their second release showed some very good progress.
Ofcourse you can look on jabbercentral for more clients but the fact
that these aren't even listed should tell you enough on how up to date
it is ;)
I like all these 3 more then JIM or Exodus..
