I havn't looked into the code very much, but maybe you are interested in 
JabberX. This is an already existing text-only Jabber client. It uses 
it's only library (libiksemel) and is written in C.
Project website is at http://jabber-x.sf.net/. I don't think it's 
maintained anymore, but it's working very well, I'm using it from time 
to time.
