FYI, the folks at Kaivo, an open-source training company, have created
two courses that might be of interest:

1. "Jabber 101" -- a 1-day overview of the Jabber architecture, probably
appropriate for those who are just starting out with Jabber (and also
for those PHBs out there ;)

2. "Jabber 201" -- a 2-day course focused on developing Jabber clients
